Ghee - or clarified butter - is essentially butter that has all the milk solids and moisture removed. The process of clarifying involves evaporating the moisture by simmering the butter, the simmering also caramelises the milk solids so they can be removed. What remains is a pure, golden cooking oil with many nutritional benefits and medicinal qualities. The removal of the milk solids enables ghee to be shelf stable and not require refrigeration.

In India, Ghee has always been a sacred and celebrated symbol of nourishment, healing and auspiciousness; especially in the daily rituals of worship and cooking. Ayurveda, the ‘science of life’ in India, recognizes Ghee as an essential part of a balanced diet, and considers it to be the best fat one can eat.
